A food's temperature curve decides whether it still counts as fresh.
A punnet of strawberries leaves a Yunnan farm cold store and reaches a Shanghai supermarket shelf. If the temperature curve has even a single break, what the consumer eventually eats may no longer be "fresh" but merely "almost fresh." Cold-chain monitoring exists to make that curve visible.
Frozen — ≤ −18 °C: ice cream, frozen dumplings.
Chilled — 0–4 °C: pasteurised milk, fresh meat.
Ice-temperature — -2 to 2 °C: certain premium fruits.
Ambient — protected from light, ventilated and pest-free. Even here, excess heat accelerates oil oxidation.
Pre-cooling at origin — fruit and vegetables not cooled within two hours of harvest suffer the most damage.
Transshipment and handling — long door-open periods cause short-term warming.
In-store display — open-front cabinets are exposed to foot traffic and door openings.
Under Hazard Analysis and Critical Control Points (HACCP), temperature and humidity are designated Critical Control Points (CCPs). Operators must therefore:
Define critical limits for each CCP.
Implement a monitoring procedure (for example, one reading every 15 minutes).
Define corrective actions such as withdrawal or destruction when limits are exceeded.
Retain complete records for regulatory traceability.
